But we wanted to pay homage to the often overlooked, yet incredibly vital, part of Latin culture: the Caribbean islands. It’s here that rum reigns supreme, and this inspired us to create something truly special and personal: our own in-house infused rums.

We selected flavours that represent the heart of Latin America: bold, tropical, and authentic. From pineapple and coconut to cinnamon, coffee, banana, and almond, each ingredient reflects traditional flavours you’ll find across the region, from street stalls to family kitchens to beachside bars. Our rums are made in-house, a rarity in the city, crafted from recipes passed down through generations. This hands-on approach brings an authenticity and creativity you can taste. Our infusion process is carefully timed for each specific flavour. For a guest favourite like our pineapple rum, it can be ready in just three hours, while others, like the rich coconut rum, take up to three days to reach their full flavour potential. Every batch is crafted to ensure the perfect balance and depth.

Our infused rums are woven throughout the menu- featured on one of our signature cocktails and taking centre stage in the "Build Your Own Daiquiri" section of our menu, which was designed specifically to showcase these creations. This gives you the freedom to customise your drink, choosing your favourite flavour of infused rum, along with how it is served: straight up, over ice, or frozen.
The feedback has been incredible. Our pineapple and coconut infusions have become instant best-sellers, with many guests returning specifically for them.
